Pork Souvlaki
An absolute favorite summer dish - enjoy it grilled on the BBQ, air fried, or even in the skillet!

- 20 oz leg of pork
- 1/3 cup olive oil
- 2 tbsp freshly squeezed lemon juice
- 2 tsp mustard powder
- 1 tsp dried oregano
- pinch of salt and pepper
Cut the pork into 1 inch squares
Mix oil, lemon juice, and spices in a marinating pan. Add the pork and mix all together well.
Let marinate in refrigerator for 20 minutes.
Thread pork onto skewers.
Preheat grill or frying pan on medium-high heat.
Grill:Cook on skewers 8-10 minutes, turning often, until pork is browned and cooked through. Frying Pan:Don't use skewers. Add a little olive oil to pan. Cook in pan, stirring often until lightly browned and cooked through. Air Fryer:Place skewers in air fryer basket. Air fry on 400 degrees for 15 minutes, until browned and cooked through. Remove pork from skewers and wrap up in a warm pita or tortilla with sliced onion, cucumer, tomatoes, and tzatziki!
If you have a very large pork shoulder or another cut of pork, simply make lots of souvlaki and freeze it in portions for later. Place approximately 20oz of cubed pork in quart sized zip top bags. Add the rest of the ingredients and mix together well. Seal and label the bags. Flatten and freeze. Now, just take one out the day before you want to grill and defrost in the refrigerator.
