Pork Souvlaki Recipe

This may possibly be my most favorite summer meal of all time. The grilled pork, of course, is delicious, but add fresh tzatziki made with cucumber from the garden, and slices of tomato, cucumber, onion, all served on a freshly made flatbread or tortilla… yeah this is what summer is supposed to taste like!

The souvlaki is very easy to put together. It’s a very simple marinade. Then you can grill it, cook it in a frying pan, or even air fry it!

I like to use a large cut of pork shoulder and make a bunch of bags to put in the freezer and serve it every week over the summer months. I usually grill it, unless we’re under a burn ban.

How to Make Souvlaki

Cut the meat into 1 inch cubes.

Place the pork in a quart size zip top bag, along with all the marinade ingredients.

Next, close up the bags and give them a good massage to move all the seasonings evenly throughout.

Flatten the bags to put in the freezer. This makes them faster to freeze and to defrost. When you’re ready to make the souvlaki, take out of the freezer a day ahead and defrost in the refrigerator.

If you’re not freezing them, marinate for at least 20 minutes in the refrigerator.

When you’re ready to cook and they’re all defrosted, thread the meat onto skewers.

Hint: If using bamboo skewers, make sure to soak them for 20 minutes before putting the meat on.

Grill the Souvlaki

Heat up the grill. Place the skewers on and cook 8-10 minutes, turning every couple minutes until the souvlaki is browned and cooked through.

Pan Fry the Souvlaki

You do not need to use skewers if you’re cooking in a frying pan. Heat up a frying pan to medium-high heat. Place the meat into the pan and stir until browned and cooked through.

Air Fry the Souvlaki

Place the skewers in the air fryer basket, or like I’ve done in the photo above, on a rack on a pan. Air fry on 400F for 15 minutes until browned and cooked through.

Remove the meat from the skewers and serve on a fresh pita or tortilla with lots of tzatziki, cucumber slices, tomato, and onion.

Ingredients

  • 20 oz leg of pork
  • 1/3 cup olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 2 tsp mustard powder
  • 1 tsp dried oregano
  • pinch of salt and pepper

Instructions

  • Cut the pork into 1 inch squares
  • Mix oil, lemon juice, and spices in a marinating pan. Add the pork and mix all together well.
  • Let marinate in refrigerator for 20 minutes.
  • Thread pork onto skewers.
  • Preheat grill or frying pan on medium-high heat.
  • Grill:
    Cook on skewers 8-10 minutes, turning often, until pork is browned and cooked through.
  • Frying Pan:
    Don't use skewers. Add a little olive oil to pan. Cook in pan, stirring often until lightly browned and cooked through.
  • Air Fryer:
    Place skewers in air fryer basket. Air fry on 400 degrees for 15 minutes, until browned and cooked through.
  • Remove pork from skewers and wrap up in a warm pita or tortilla with sliced onion, cucumer, tomatoes, and tzatziki!

Notes

If you have a very large pork shoulder or another cut of pork, simply make lots of souvlaki and freeze it in portions for later. Place approximately 20oz of cubed pork in quart sized zip top bags. Add the rest of the ingredients and mix together well. Seal and label the bags. Flatten and freeze. Now, just take one out the day before you want to grill and defrost in the refrigerator.
